Chicken and Pear Salad – To Go!

LUNCH!!  What to make so the kids don’t eat junk all summer at their job?  That is the question.  It is really a challenge to keep enough Paleo food in the house that also travels for lunch.   This guy needs a lot of food or he just runs to the any fast food he can find.  Yes, my son Liam is an adult but I do love to make sure all my kids have some healthy options when they are around.  We are currently housesitting at my dad’s house and he left a very full fridge so I’m am trying to cook through all of the veggies in the house before we start adding more stuff to the fridge. He had pears and romaine lettuce so voila pear and chicken salad!

I adapted a recipe from a Spinach, Pear and Chicken salad from Food Network.  I don’t have any craisins at the house or almonds but if you do give them a try.  Probably adds some great color to the salad.  I added some sliced orange peppers on the top of the lunch containers so the chicken wouldn’t look so bland.

This salad is so easy and you can use my recipe for Lemon and Garlic Marinated Skillet Chicken for the chicken or you and just use any leftover chicken you have.

Chicken and Pear Salad

  • Servings: 4-6
  • Time: 5 - 10 minutes

Ingredients

  • 1.5 lbs of cooked chicken or Lemon Marinated Skillet Chicken
  • 1-2 bosc pears
  • 3-4 tbs  extra virgin olive oil
  • 1 tbs apple cider vinegar
  • 1 tbs lemon juice
  • 1/2 tsp sea salt
  • sprinkle ground pepper
  • 2 tsp whole grain mustard
  • 2 heads romaine lettuce chopped or 2 cups of salad greens per person
  • optional – 1/3 cup dried juice sweetened cranberries
  • optional – 1/3 cup chopped or slivered almonds

Directions

  1. Chop or shred your chicken into bite size pieces
  2. chop your pear
  3. Make your dressing by combining olive oil, lemon juice, cider vinegar, salt and pepper, and mustard in a bowl and beat with a fork.
  4. Combine chicken, pear and optional ingredients in a bowl and pour dressing  over it.  Stir to combine.
  5. If you are packing this as a lunch.  Put lettuce in a container and chicken in a separate container so the lettuce doesn’t wilt.  Combine before eating!
